Our Story
In the heart of La Mancha, specifically in Ossa de Montiel, lies our cheese factory, nestled within the majestic Natural Park of the Lagunas de Ruidera. This natural setting not only offers us an impressive landscape but also provides the perfect conditions for producing our high-quality Manchego cheese.
Experience and Tradition
With over 50 years of expertise in the art of cheesemaking, our factory takes pride in preserving the traditional customs and techniques passed down to us. Each of our cheeses is crafted with dedication and care, using Manchega sheep’s milk, thereby ensuring the authenticity and excellence of our products.
Cheesemaking Process
The production of our cheeses combines artisanal methods with strict quality control. From the careful selection of the milk to the maturing process in our ageing rooms, every stage is meticulously supervised to guarantee that each cheese meets the standards our customers expect and deserve.
Our Shop
In our traditional shop, we not only offer our cheeses but also a curated selection of the finest local products. Here, visitors can discover a variety of gourmet items that reflect the richness and diversity of Manchegan gastronomy. From cured meats and wines to oils and preserves, all our products are chosen for their quality and authenticity.
Commitment to Quality
Among our most notable achievements is being awarded the Silver Selection Prize in 2020, 2021, 2022, and 2023 in the Cured and Semi-Cured categories of the Gran Selección Awards of Castilla-La Mancha.
In 2024, we were honoured with the Bronze Selection Prize in the Cured category at these prestigious regional awards.
In 2025, our brand Los Boliches, registered under the Protected Designation of Origin Queso Manchego, has once again been recognised with significant distinctions. We obtained the Bronze Medal in the Semi-Cured category and another Bronze Medal in the Cured category at the Campo y Alma Awards, a reflection of the value our land places on well-crafted work and the excellence of traditional products.
Additionally, we are especially proud to have received international recognition with a Bronze Medal at the World Cheese Awards for our Don Eusebio Cured Cheese in Lard, one of the most prestigious cheese competitions worldwide.
